I Just Know.

MAN!! am i BLESSED!!!! =D
i have a job, two actually...but this morning i went to a job fair. im back at b-dubbs, but i want to get into the culinary field, get experience NOW and not wait until my externship ya kno?
well, class has still been going well!! We been learning about SAUCES, and we are getting into making soups out of the mother sauces, love it! Today I had a Practical on making three of the sauces [Hollandaise. Beurre Blanc, && Beshamel], i got 27/30. I had a problem with the heat with my on the Beurre Blanc & Hollandaise so i lost a few points but glad that i didnt do too bad!! the highest score was 29..[s/o to edwin lol :) ]
OH!! i learned how to poach an egg last week, and i must say i poahced the egg burr-tifully for the first time *brushes shoulder off* ..the Hollandaise is what goes on top of the poached egg to get your Eggs Benedict. and i actually like it. cayenne is in the recipe, and if you aint know i LOVE spicy foods so added, a lovely amount [lol] to my hollandaise. Chef actually liked mine too, he used it to go with his eggs benedict!! Ha! when he took his first bite he said, "Ooh G! Yours got a kick to it!!" lol but glad that he liked it =]
oh, and i also made a Remoulade out of mayonnaise. A remoulade is basically like a tartar sauce. i like it too, well not the packet stuff, but the homemade one. I made the mayonnaise first, then added some things like dill pickle and anchovies and capers and otha thangs..lol sounds crazy! but actually is really good....& ion even like mayonaise or any other stuff that was put together. i wanted fish sticks after i made it.lol
.......you ever wonder what fishsticks (the packed kind) is made of???? is it really fish???? 0_o

 lol the sauce above is the Hollandaise, its supposed to be more of a bright yellowish color, mine wasnt since I "boosted" it up w/cayenne ;)
Today, i made an French onion Soup, and it was DEE-LISH!!lol i toasted a baguette with grated gruyere cheese on top, and made that lil cheesie thingy from the gruyere too, just to make it a lil mo' sexy=]
