More Soup Please...

why am i still tired? when i came home from class today i took a long ol' nap cuz i didnt have work today, but right now im feelin tired..weird..

so today in class we made two soups!! and they came out sooo good! well, i made three. Chef said if we wanted to we could make a third one (Potage Permentier) its basically the same as the Potage Julienne that i made the other week except it doesnt have the juliennes in it. i was the only one who made it, but why not get more practice ya kno?? and it came out really good! i was happy because between me & you, i didnt measure anything, i just kinda eyeballed it and made it, but it was a success!!!!

would you care for some soup?

another successfull day!!
today i made three different soups;
  • Potage Julienne D'Arblay-a potato & leek soup, with carrot, leek, and turnip juliennes.
  • Cultivateur- a vegetable soup with carrots, turnips, leeks, cabbage, peas, green beans, potato.
  • Creme Dubarry- a creme soup of cauliflower (<==*my favorite of the 3*)
I finished at the last minute but was able to serve Chef Mike all three (hot) at the same time which was my goal. Now I just need to work on getting it done faster, URGENCY!!
So happy that it came out good though. i brought what i had left home and let my roommate taste it and she downed it in like 57 seconds!! ha!

everytime i step in the kitchen, im too happy! i love learning about everything, all the different techniques, even things you would think is simple like mis en place, everything in place. I know when i step in the kitchen, or anywhere outside, when i have a goal, it is important to make sure everything is in place before i even start. im content with where im at and my accomplishments so far, but I am striving to be the BEST!!

 Creme Dubarry, i loved this one the most!! its a cauliflower soup, garnished with yet another piece of bread toasted w/gruyere cheese.
 Cultivateur; a vegetable soup. &quite tasty.
 Potage Julienne D'Arblay; a potato soup with leek, carrot, and turnip juliennes. Oh, & I made the croutons myself =]
               Chef Mike, your in for a taste of heaven! lol

I Just Know.

MAN!! am i BLESSED!!!! =D
i have a job, two actually...but this morning i went to a job fair. im back at b-dubbs, but i want to get into the culinary field, get experience NOW and not wait until my externship ya kno?
well, class has still been going well!! We been learning about SAUCES, and we are getting into making soups out of the mother sauces, love it! Today I had a Practical on making three of the sauces [Hollandaise. Beurre Blanc, && Beshamel], i got 27/30. I had a problem with the heat with my on the Beurre Blanc & Hollandaise so i lost a few points but glad that i didnt do too bad!! the highest score was 29..[s/o to edwin lol :) ]
OH!! i learned how to poach an egg last week, and i must say i poahced the egg burr-tifully for the first time *brushes shoulder off* ..the Hollandaise is what goes on top of the poached egg to get your Eggs Benedict. and i actually like it. cayenne is in the recipe, and if you aint know i LOVE spicy foods so added, a lovely amount [lol] to my hollandaise. Chef actually liked mine too, he used it to go with his eggs benedict!! Ha! when he took his first bite he said, "Ooh G! Yours got a kick to it!!" lol but glad that he liked it =]
oh, and i also made a Remoulade out of mayonnaise. A remoulade is basically like a tartar sauce. i like it too, well not the packet stuff, but the homemade one. I made the mayonnaise first, then added some things like dill pickle and anchovies and capers and otha thangs..lol sounds crazy! but actually is really good....& ion even like mayonaise or any other stuff that was put together. i wanted fish sticks after i made it.lol
.......you ever wonder what fishsticks (the packed kind) is made of???? is it really fish???? 0_o

 lol the sauce above is the Hollandaise, its supposed to be more of a bright yellowish color, mine wasnt since I "boosted" it up w/cayenne ;)
Today, i made an French onion Soup, and it was DEE-LISH!!lol i toasted a baguette with grated gruyere cheese on top, and made that lil cheesie thingy from the gruyere too, just to make it a lil mo' sexy=]

I Will Rejoice!!

im broke.
im hungry.
no phone.
but,
i have a place to stay, im still in school, i recently got 2 jobs ( i start training today yee!) so i can not complain at ALL. Just when i start to get sad and wanna go to the beach to drown in my sorrows...i have to stop and really really THANK GOD because it could be worst.
I saw a little clip of Bishop T.D. Jakes last night and he was talking about freeing the mind. thats exactly what i need to do. Freeeee Myyy Miinndd!!! The enemy tries to attack our mind, make us lose focus, stress out, worry. its easy to be glued to the couch eating ice cream..cookies, and bacon and it's  dark inside while there's rainbows and unicorns and the sun's shining outside. but why the long face!!!??? REJOICE and thank God for what He has done, and what He is going to do!! That makes me feel better already!! we all must have FAITH.
ok, dont mean to preach, but its hard out there and i know im not the only one struggling.
ya' gotta keep ya' head up! *Tupac voice*
other than that, we started our next class (foundations II) and it just gets better && better everyday. we are starting out with learning the Mother Sauces of cooking. Once I get this down, I will be able to cook anything pretty much. Its so basic, and simple. Yet, it is VERY IMPORTANT to know.

God is good. Im finna duece out. still got the whole day ahead of me.

I dont see nothin' wrong...

so last night me and my roommates went to this Restaurant "The Dock". its outside, on the beach, real nice. and last night was karaoke night!! lol you know i had to do a song. i did R. Kelly "bump&grind"..LMBOO it was so funny!! but i got the crowd going, a guy even threw a lai (sp) on the stage hahaha!!
and it was in front of a lot of people too!! omg i was nervous but i had so much fun. it made me feel better when people came up to me after saying they loved it!! ahahaha too much fun.
but i needed it.

...sometimes you just gotta let loose, and enjoy yourself.
&& i dont see NOTHIN' wrong with that.

Gazpacho.

Oh!
I made Gazpacho for the first time. Ive never even had ot before i even made it. (Its a cold soup). it came out prettttyyy good. Chef said it was too thick but that could be solved easily. happy it came out alright tho.

So ive been busy studying like crazy and looking for ANOTHER job. yes i got a job! thank God. im working at Soldier Field for a "Private Club" in concessions. And even though i am very very grateful for this job and excited to get my foot in the door....i still need another one because i will only work on days of football games..soo....yea....
but the last demonstration Chef did was when he cooked this guinea bird...i was nervous about it, if it aint chicken iono...i named him Ruffis before he was chopped up and seasoned.
Ruffis ended up tasting quite delightful.



Yesterday was a BEAUTIFUL DAY!!! Just so beautiful.
in the A.M. we went to a chocolate buffet at the school.......yummm.....it was ==> whatitis.com
it was the students in the Pastry Programs last day so they made a whole bunch of chocolatey goodness and there was some sugar sculptures too. im excited to take the course!!!

cheesy thingys.

tired.stressed.home sick.broke.
but yet, im BLESSED.
after a long, encouragin talk with one of the besties ricky<3 last night, i feel more confident & determined today. im still praying myself through this all, and i know Gods plans are for the betterment of my life.

today in class chef made a goooood soup, two actually. one had lobster in in(Bisque de Crevettes..yuum) and the other was made with potatos (Potage aux Poireaux et Pommes de Terre) <==learning french is fun btw....and we alllll know that i am the "Potato Queen". i took one of the bowls and went to work!! LOL
chef had me make these lil cheesy things...(fresh shredded parmesean cheese that i put in the oven to make these little, cheesy crisps lol) they tasted like cheez-its to me!! but they went well with the Bisque de Crevettes.

im so happy in the kitchen. that and when i go to Seward park to play basketball.lol
still on the search for a job. I HAVE FAITH YALL'.....i have faith....i keep talking to God like, Ooookkk, i gett iiittt...this is a test...i knooooo...cant i just get everything easy now!?!?!? lol i kno, its life...and unfortuantely it dont work like that.....huh.

This right here is what one of the higher students had made. Its a chicken jellotin. it had chicken, ham, pistachios...and idk some other craziness. i forgot. but, it was pretty good.
