still trying to find a job. really didnt think it was going to be this hard. but, im good....

i love what my career is going to be. there is so much to food, and cooking than it seems. the other day we learned about a wondeful chef named Ferran Adria, who is from Spain. He is a chef that applies science to to the culinary practices and creates things that it, different but amazing that will mos def surprise you while eating. He is the chef for creating "the foam"...(basically flavored foam). but the differnt things that he does really caught my interest. im putting it on my list of TO DO's to hit up his restaurant El Bulli =]

the other day in class we made some goooood ol' shrimp. i made a simple but good marinade for the shrimp. after they sat in that for a while they were dipped into a wet batter, then fried. there was a mayonnaise for the shrimp that was made to. mind you, we make FRESH, mayonnaise from scratch then add our own flavors to it. for this particular dip i know some parsley,basil, dill, cayenne, garlic were all thrown together into this mayonnaise and came out to be http://www.thebombdiggidy.com/.

i love how im learnig thes simple...well, a lil complex in the technique in making them, but yet its so simple but comes out tasting like i just ate at a fancy restaurant. im trying my best to memorize all of these basic techniques because once you get these down you can just add on and make it more complex.

gimme da' bacon!

yo!
yesterday, i made a red sauce. The sauce came out good, and mine was the best in the whole class =] lol naw but it came out really good, so another success!! i didnt make the pasta but learned how to make it. its really easy so im gonna have to try it out at home.
we got to go to another buffet yesterday too. basically we are test dummies for the people in higher classes that cook and need our feedback....I DONT MIND!! One thing I was afraid to try was the raw salmon. A guy had made a cream cheese, with lil salmon bits in it, which was really good. put that on a bagel with the salmon on top nd there ya go....i was nervous but i told myself i MUST try everything, at least once. but i can say that I would eat it again.
&who said bacon wasnt good in banana bread?! yes, banana bread. someone had made a BACON BANANA BREAD and it was #onpoint. lol sounds crazy, maybe all yall' baconaters just got excited...and you should because it was pretty darn good.
speaking of bacon, i got an interview monday. so you can say the job search is coming along. I need to start bringing home the bacon!!

EXTRA mayonnaise please.


Yo!!
°Today i made mayonnaise from scratch..i really dont like mayonnaise, but this wasnt bad. Its hard to make!! Well more tiring than hard...you gotta whisk and whisk and whisk until it gets thicker. When you can turn your bowl upside down nd the mayonnaise stays then your good!!
° todays day so far has been coo..after class I came home and cleaned like it was spring..it got a lil too dirty, and with four people in the house gotta make sure it dont get crazy!!..i dont see how they did it on the Real World (MTV).
Well I need to figure out what to do with my hair, hit up UPS nd do some more job searching.

red, red wiinnee.

so today, i made a red wine vinagrette. it was DEE-LISH. ha!
i was proud of myself. when i asked chef riley to taste mine, before he even tasted it he said it looked great. appearance is important. and he can tell, well a lot of us can tell if something right or not just by the way it looks. if someone say to you they made suga' cookies and walk up with a plate of hockey pucks lookin thangs, you know right away them aint' no suga' cookie. THEM AINT' NO DAMN SUGA' COOKIES MANNN --->(martin voice lol)
any who so that made me smile when he said it looked great...now for the taste..
he thought it tasted great too! i was happy to hear, "oh yea, thats good" nd to get a pat on the shoulder to show that he was pleased with the outcome.
BOOOOP!! <--hood thing to say when something turn out good lol

well the job search still goes on. just got done applying to some more places actually. keep me in your prayers!

SN. why the heck do people feel to hit someone in the head (with like a book or whateva in they hand at the time) when they greet em? ive seen it like 3 times already here, eveytime i come in the computer lab lol 4!! i just saw it again as i typed that. lol all i know is that they bet' not do that to me they gon' catch an elbow to they hip when i turn around......jp. *smiles*

i need some food.
oh && we just mixed some cut up thangs with the vinagrette

Lets Catch Up.

Ive only posted a few things and i already went missing, due to my mini laptop that has been acting up on me this past week. i need to take it into best buy and let them fix what they were supposed to fix before i left texas SMH (shaking my head for those of yall who dont know). any who i am at my school right now just got done revising my resume. Im tryna get that good ol' JAY OH BEE.

school is amazing. i love my school, my chef, surrounded by good people. im already learning a lot!! yesterday i got my first owie (awww) lol i cut my fingertip trying to clean up a lovely basket that i made out of a LEMON, yes a lemon. i know, im cool. I blame it on the fact that a crazyyyy storm came out of nowhere and i was frightened by the hard blowing wind blowing the rain sideways, the thunder that shook the whole building, and the lighting that was so bright i couldnt see .7 seconds after it lit........(0_o) thats to blame for my cut.

any who. so in the kitchen we are focusing on our cuts. i been cutting potatoes, onions, scallions, leeks, carrots, zuchini and such and learning different shapes and fancy french names. in the classroom im working on getting me ServSafe certification. Even though it is a very much needed class that everyone should take, its kinda scary. now i look at the simple foods like my milk and cookies, or a bowl of rice and think, man i might be putting a bad pathogen down my body, or make sure i cook that chicken right cuz i dont want NAN parasite!....ughh....
well i need to go get out of this uniform and go find a job.

Chef Girl G

Today was my first day of school at Le Cordon Bleu. you would think it was my first day of kindergarden the way i was smiling, wearing my uniform, and carrying my back pack and tools. i was looking around lie am i the only one excited n ths piece about schoo!?! lol ive never been this excited bout school. but i feel like this is where i belong...im finna do big big thangs ya digg.

well after school i attempted to take a nap but that didnt go too well so i just made a few calls, im tryna get a JOB....lawd i need a job, not now, more like last week!..but im trying to be patient and do my thang thizzle nd get it!.
i was so bored today tho..i walked to the park TWICE..second time there was guys playing there, i wanna to run hom get my shoes and go hoop with em but i was like naw,,ill just observe today. i miss the court.
i wanted to pop this lil boy in the head cuz he wanna light firecrackers by the court. like lil boy where ya momma at?!

well nothng happened that wass interesting, or too interesting today. i hope that this fire and desire for this career continues. i cant get discouraged either. theres a lot of talented people out there and want it just as much as i do. a lot of these people have the experience already, but i know i have heart and God so i aint trippin (awww lol)
well i need to get out of this comfy towel and make me some mac&cheese...after i put my pj's on of course lol..oh! and ill post a pic of me in my chef fit lol later my lil maccaroni's

settled down..

finnally. unpacked. nd settled in my new apartment. yay me.
i thank God for family. today my aunt and cousin helped me out tremendously!! we went to wally world and they got me some groceries and some thangs for my apartment. so blessed to have a family that'll look out for you ya know. now we may not be the family that'll just spoil the children and give em' everything they want, but i know if there is anything that i need, they will do they best to help.
i hate having to ask for things. the only time i will is if im in dire need of something. but i didnt even ask for the things that they got me. LOVE!! thats all that iis, and its what i need...
now, i need to lay it down because im getting up to make sure i get me a jayy ohh bee!! gotta get it!!
and it is, btw, my first night inmy new spot. roommates is coo (so far 0_o ) its four of us...yall pray for meee!!!lol
